Photo - Asamurasaki Tsuyu Sauce
Tsuyu つゆ is a dipping sauce (for noodles) and is also used in pot-boiled dishes. It is made from mirin, soy sauce and dashi. This tsuyu uses agodashi which is dashi (soup stock) made using Japanese flying fish (ago あご 飛魚) .
